About this deal

We usually like to group things in fours, but this one is an exception and we’ve gone for threes instead.

At Four Pillars Distillery we use the best stills, water and botanicals to make the world’s most delicious and awarded range of craft gins. Learning about Four Pillars’ distillation process it’s clear that they take great pride in how their gin is made. There’s a delicate sweetness of liquorice too from the anise and this far more prominent with tonic. Book a table at our bar in Surry Hills to try world-class drinks, soak in our atmosphere and perhaps treat yourself to a few of our bar snacks. It took Four Pillars 18 months of experimenting with their recipe before deciding on the botanicals which make up their gin. That being said, the character complements Vermouth brilliantly, making Four Pillars Rare Dry Gin a great choice for the Martinez or Negroni as well.

Fourpillarsgin Journal - Fourpillarsgin

While it’s perhaps best known for its wines, Australia’s Yarra Valley is home to one of the country’s most popular gin brands – Four Pillars. Where Rare Dry Gin made with oranges is warm and well-rounded, and Rarest Dry Gin made with bergamot is herbaceous and bitter, our middle child – Rarer Dry Gin made with cumquat – is clean and tangy.Sourcing organic oranges from various Australian producers throughout the year, they vary the volume in each batch throughout the season, due to the differences in the oils from different varieties.
